Quick Cooking Microwave Dhokla

Hello Friends,

Another Tuesday and another version of bookmarked recipes. These days, it feels like all I am doing are cooking from others' recipes as I am so sick of my own food... lol

Here is a wonderful and spicy Quick Cooking Microwave Dhokla from Rajani's Blog. I have to say, it exceeded my expectations and now I will be making it frequently. I have to tell you guys here that I love dhokla and this was my first experience of making it at home and I love the microwave way :)

Easy Eggless Microwave Brownie from Veggie Platter

Hello Friends,


Here I am with another decadent, ooey-gooey chocolatey recipe that I am sure my fellow chocoholic friends will love and surely give a try. 


I tried it from Suma's blog. After seeing her recipe, I had to try it out and so I did and absolutely loved it. The taste, simplicity and how quickly it comes together. It cannot get better than this when you want a quick and sinful brownie :)

Eggless Microwave Chocolate Cake

Hello Friends,

Another bookmarked recipe which I tried on our Saturday potluck and we couldn't get enough of it. I took Eggless Microwave Chocolate Cake recipe from Aparna and I have to say I was amazed at the results. I did not expect this wonder to come from microwave. I event made the glaze in microwave and made extra of it and enjoyed it till the end. We literally fought for the slices and we had to tell kids to wait (after they had their first round) till all adults have eaten to be able to get more of it, lol. That's how good this was. It was softy, moist. Do try and I can guarantee you will love it :)

Roundup of MEC - Rice Event

Hello Friends,


Firstly, I want to thank Srivalli for even starting an event like MEC and letting me host MEC - Rice, because like I already said, all I used to use my microwave was to heat up stuff and period, nothing more. Microwave Easy Cooking - Plain Rice

Hello Friends,


I want to thank Srivalli for even starting an event like MEC and letting me host MEC - Rice, because all I used to use my microwave was to heat up stuff and period, nothing more.


If you haven't already send your entries, then hurry up and send as the event ends on 31st march 2011.
But, because of her, I have started to at least think about various other options. This is one recipe which a friend of mine taught me when I was living a married but single life in Pittsburgh and I was surprised when she made rice this way.


Microwave Easy Cooking - Plain Rice
Ingredients
Rice - 1 cup, I used Sona Masoori type
Water - 2 cups (Varies depending on which brand or variety of rice you are using, so change this accordingly)
Preparation

  • Wash rice properly.
  • Add water and rice in a microwave safe bowl, double the size of the quantity of rice you are adding. Remember water will boil and rice will puff up, so it needs all that extra space.
  • Keep the lid on the bowl, but not tighly as it needs to let out the steam.
  • Cook it on high for 15-20 minutes, depending on your rice variety and how well you want it to be done. For my microwave, about 17 min. is the time.
  • Let the bowl cool down a little (about 3-5 min.) before handling it and slowly puff the rice with fork, if you want the grains intact.
  • Wasn't that easy? :)

Serving
Serve it with any gravy or dry curry or dal or podi/oil or chutney or practically anything you eat rice with... lol

Milk Rabri in Microwave

Hello Friends,


OK, if you are a milk product fan, you will absolutely go gaga over this one. I love my rabri and this was God Sent because of how easily you can whip it up.


I love Nivedita's blog and her recipes, but this is somewhere at the top due to the simplicity and ease of preparation. She served it cold, but I am sure you all know by now how I like mine warm, so I ate it warm, right out of microwave. Remember, it thickens as it is cooled down.
Milk Rabri in Microwave is something I would recommend all of you to at least give a try and I can guarantee you will fall in love with it and will make it at every occasion.

Microwave Bread Halwa (Pudding) - From Priya's Easy N Tasty Recipes

Hello friends,


I have so many of Priya's recipes bookmarked, but just not getting enough time to prepare. I have some bread, ready to go bad, so this was the right chance for me to prepare this wonderful warm dessert.


Microwave Bread Halwa is something that all of you should try. It hardly takes like 10 min. from start to finish and you have one delicious, mouth watering dessert in hand. I will not re-write her recipe here as she has done it beautifully and elaborately in her blog like many many delicious recipes of hers. The only change was that I used Whole Wheat Bread instead of Baguette slices like she did. Please visit her blog to check the recipe and enjoy my picture :)

Gajar Aur Mawa Ka Halwa - गाजर और मावा का हलवा (Carrot Dessert Cooked in Microwave)

Hello friends,


I always wanted to try Gajar Halwa the microwave way and I found this recipe here from Sanjeev Kapoor's site.


I have a question from the fellow bloggers or readers who do microwave cooking. I only use microwave to cook rice or to heat up my food, that's all. Check my pic and do you see how my grated carrot did not retain its orange color and instead have turned somewhat darkish, any idea why? I mean when I cook it on stove top, they retain the color. Hope someone can answer me.


Gajar Aur Mawa Ka Halwa - गाजर और मावा का हलवा (Carrot Dessert Cooked in Microwave)


Ingredients
Carrots - 4 cups, grated (this quantity is that of grated carrots)
Khoya/mawa - 1 cup, grated or crumbled
Ghee (Clarified Butter) -  3 tbsp
Ilaichi (Green cardamom) Powder -  1/4 tsp
Sugar - 1.5 cups
Kaju (Cashewnuts) - 1 tbsp, chopped
Kishmish (Raisins) - 1 tbsp
Pistachios - 5-6, chopped for garnishing
Preparation


  • Place the grated carrots in a microwave proof bowl. Add ghee and mix. 
  • Add green cardamom powder and mix. Cook in the microwave on HIGH for five minutes. 
  • Add sugar and mix. Cook in the microwave on HIGH for three minutes.
  • Add cashews, raisins and khoya (keeping aside some khoya for garnish) and mix. 
  • Cook in the microwave for two to 3 minutes. 
  • Garnish with the reserved khoya and pistachios and serve hot or cold.
Serving
Serve them as a dessert or even as a snack.

Masala Masoor Dal - मसाला मसूर दाल (Spicy Split Red Lentils)

Hello friends,


A Very Happy Father's Day to all my fellow bloggers and readers and their dads.


Here is a very simple dal, which is our family favorite in my mom's family and of course now my husband and mine too :) 


Usually we cook this along with Aloo Posto (recipe will follow soon) and that is like "the" combo we like.


I usually cook it on stove top (never used cooker for it as masoor dal is very quickly cooked). But, this time I wanted to use microwave through and through just to take part in MEC - Delicious Dals event, which was originally started by Srivalli.


Masala Masoor Dal - मसाला मसूर दाल  (Spicy Split Red Lentils)


Ingredients
Masoor Dal (Split Red Lentils) - 1 cup
Water - 3 cups
Haldi (Turmeric Powder) - 1/2 tsp
Dhaniya (Coriander) Powder - 1 tsp
Jeera (Cumin) Powder - 1 tsp
Salt - as per taste
For Tempering
Jeera (Cumin Seeds) - 1 tsp
Rai (Mustard Seeds) - 1 tsp
Sabut Lal Mirch (Dry Red Chili) - 3-4, broken into pieces
Oil - 2 tsp
Preparation

  • Wash and drain dal.
  • Take dal in a microwave bowl with water, salt and haldi.
  • Cook it for about 15 min in microwave or till it is well cooked.
  • Now, take a small microave safe bowl and add everything under "For Tempering" and heat for 2 min.
  • Mix tempering in the cooked dal along with dhaniya and jeera powders and cook again in microwave for 5 min.

Serving
Serve it with roti or warm rice.
