Hello Friends,
I am sure all of you know by now how I am a big fan of Chocolate. And, Nutella has become a staple in my house these. Even my husband and my older one who are not a fan of chocolate love Nutella.
So, whenever I get a chance to bake with Nutella, it is amazing. Plus, this recipe, that I am sharing with you, which has been a replica of recipe from US Masala, is so simple to make that it is going around viral in my circle. I made and had 3 of my colleagues taste it and all of them have already retried and also passed it on. I don't think I need to tell you any more than that, do I?
I have to share this funny story though, before I jump on to the recipe. I baked these for my son's school's open house. It was sent to an activity called "Cake Walk" during the open house. My son happened to participate in it and won a round. The reward for winner was to pick a baked good that people had donated. And, guess what my son picks, my own brownies. I asked him to reconsider, and he flattered me by saying, "But, I love these mom". That is the best compliment I have gotten yet :)
3 Ingredient Nutella Brownie
Ingredients
Nutella - 1.5 cup
Egg - 3 large
All Purpose Flour - 1 cup
Preparation
- Heat oven to 350 degree
- Whisk Nutella and Egg till well blended
- Add flour and whisk till well blended (add 1 tbsp oil or butter if it seems too hard).
- Pour in a square pan or muffin liners (You could choose to use nuts in this stage, if you like them as a topping). Just for the easy of carrying I baked in muffin liners.
- Bake for 20 minutes.
- The ingredients mentioned here made me 16 brownies the size of these muffin liners.
- If you just want to make 5 or 6 use these ingredients (Nutella - 1/2 cup, All Purpose Flower - 1/4 cup and Egg - 1 large)
Serving
I served them warm as that is what brought the best taste. As you can see from my picture, I served few as it is and few with Nutella spread at the top.

How is everyone? HAPPY VALENTINE'S DAY. No, my post is not related to valentine's day. A simple but delayed post for this month's Blog Hop. I would like to apologize to Radhika and my this month's partner Neha. Sorry ladies, made it over the weekend and just blogging about it.
Neha, got to say girl, it was a hit, loved by all and wow, what a flavor and texture and that smell of roasted garlic was simply awesome.
In my family, both hubby and I absolutely love garlic in almost anything, yes, even in our bread :) This was a perfect recipe. The only change I made was I didn't add all the toppings that Neha suggested which are cherry tomatoes, onions etc. as I was making it considering my kids and a friends' kids as well and didn't think kids will appreciate it as much. I will give it a try in my next attempt.
Unfortunately, I forgot to take the picture when it came out of oven or when I was serving the first slice. I could only take it once everything was almost done. Thus, the poor picture. I promise to update the picture pretty soon as I am very sure that I am going to bake it again very soon. Till then enjoy this !!!
Roasted Garlic Focaccia
Ingredients
For the bread
All purpose flour-5 cups
Salt - 2 tsp
Sugar - 1\2 tsp
Yeast - 1 1\2 tsp
Luke warm water - 1 1\2 cups
Garlic - 6-7 pods, Roasted and chopped or sliced as you may like
Extra virgin olive oil - 1\4 to 1/3 cups and 2 tbsp for oiling the pans
Bread Toppings
Cherry tomatoes-5-6(halved, optional)
Onion-1\4 (sliced, optional)
Garlic - a couple of pods roasted, to top the bread
Mozzarella cheese - 3 tbsp (or use any combo of cheeses)
Preparation
- Mix water, sugar and yeast in a bowl and let it sit for 5-10 minutes till froth forms at the top, confirming that yeast is indeed active.
- Now, take the rest of the ingredients for the bread and mix them till all comes together as a ball.
- Mix well for 3-4 minutes. Remember it will be very sticky, so don't try to add more flour to make it dry.
- Oil your hands and bring the dough together into a bowl.
- Oil a bowl (with 1 tbsp oil) and place the dough in it. Cover and let it rise for an hour in a dry warm place. Your oven is a great place, just don't switch it on.
- After an hour, oil the baking pan (I used a square pan) and punch and place the dough in the pan. Use your fingers to spread the bread evenly on the pan. I usually prefer leaving my finger denting in the pan.
- Top the bread with all the toppings depending on what you prefer and cover and let it rise for another hour.
- Preheat oven to 350 F and bake the bread for upto 35 - 45 min. Ovens vary, so, please check the time. Inserting a toothpick should come out clean.
- Let it cool down a bit (not all the way as it tastes better warm) before enjoying.
Serving
I served it with our evening tea. But, you can also prepare a dipping sauce of any kind you like and serve it as an appetizer as well.

I am here with a wonderful recipe that I learnt from my Fantastic Friend (Colleague) Frank (3 Fs) :). He made it enough and shared with me that I was forced to give it a try and share with my friends. And, what special occasion than Super Bowl !!!
Without further ado, here it is. The recipe in his own words. Thanks Frank, it was a hit at the party :)

Rum Cake
Ingredients
For Cake
1/2 cup milk or water
1/2 cup rum
1/2 cup oil
1 box yellow cake mix
1 box vanilla pudding
4 eggs
1 cup chopped walnuts
Icing
1/4 cup rum
1/4 cup water
1 cup sugar
1/2 cup butter
Preparation
- Preheat Oven to 325 F
- Combine all ingredients for cake, beat 5 to 10 min.
- Pour batter into well greased and floured Bundt pan or tube pan
- Bake as directed on cake mix box. I did for about 45 minutes.
- For Icing, boil Sugar, butter and water for 2-3 min.
- Let cool, add rum, mix well.
- Pour over hot cake.
- Let it soak in. Overnight is best.
Serving
Serve it in slices as you like. Enjoy !!!

How is everyone doing? It is so much fun. All of a sudden winter started, to get cozier in warm clothes and with a cup of hot chocolate or this nice hot panini sandwich using Focaccia Bread.
I had seen this recipe @ Champa's Blog. Who doesn't know her, right? She is one stop for all baking needs. You will get every kind of baking recipe there, even recipes for home made bake mixes. Isn't that cool.
So, I had this recipe bookmarked from her as I am into baking these days. I tried this recipe, sounds tricky or weird due to the amount of oil, but it comes out perfectly. One of my friend tasted the recipe and she said, it tasted like a masala bun that they used to get in Bangalore. How cool is that :)

Another wonderful Sweet Punch posting day. This month Ria gave us a free reign to bake anything we would like to, which as usual confused me. But, I had this recipe bookmarked for a while and I had bananas ready to go bad, so this is what I made for this month.
The bread was as mentioned by Tia, a cafe style and that too a melt in the mouth kind. If you like banana bread, this is the recipe you can count on. I guess this is the best banana bread I have baked so far. Take my word for it.
Cafe Style Best Ever Banana Bread
Recipe Source: Buttercream Barbie
Ingredients
Wet
Banana - 3 large ones (about 1 to 1.5 cups mashed banana puree or little chunky as you like)
Eggs - 2 beaten
Buttermilk - 1/3 cup
Oil - 1/2 cup (I used Canola Oil)
Dry
All Purpose Flour - 1 3/4 cups, sifted
Sugar - 1 - 1.5 cups (I added 1.5 and felt that I could have reduced a bit)
Baking Soda - 1 tsp
Salt - 1/2 tsp
Nuts
Walnuts - 1/2 cup, chopped to bits
Preparation
- Preheat oven to 325 degrees F and grease a load pan.
- Whisk together all wet ingredients till nicely blended.
- Sift together all dry ingredients.
- Now, add dry ingredients to wet slowly and mix till all come together and there are no lumps.
- Add walnuts (you can also add 1/ cup of chocolate chips here, if you want to) and mix them in the batter.
- Pour the batter in the greased load pan and bake for 1 hour 15 minutes. Keep checking after an hour to make sure you don't over bake.
- Let it cool on rack completely before you cut them into desired sized slices.
- The ingredients mentioned above made one loaf for me.
Serving
Serve it just as it is. I have tried both warm and cold and it tastes alike, simple delicious.

Another month and another wonderful Sweet Punch Entry. This time it was mouth watering and super yummy Coffee & Chocolate Pudding.
It was super easy to put together, about 5 minutes and then 20 min. to bake and this is a dessert that you can enjoy right out of the oven, so no need to wait for it to cool down completely :)

Coffee and Chocolate Pudding
Recipe Source: Fair Lady
Ingredients (makes 4 servings)
All Purpose Flour - 1 cup
Baking Powder - 2 tsp
Cocoa Powder - 2 tsp
Salt - one pinch
Brown Sugar - ½ cup
Butter - 2 tbsp, melted
Milk - ½ cup
Egg - 1, beaten
For the topping
Brown Sugar - ½ cup
Cocoa - 3 tbsp
Strong Black Coffee - 1 cup (I used Nescafe Decaf)
Preparation
- Preheat oven to 180°C.
- Sift together dry ingredients.
- Stir through butter, milk and egg until well combined.
- Spoon batter into 4 ramekins.
- Sprinkle over brown sugar and cocoa then pour over coffee but do not stir.
- Bake for 20 minutes.
- Dust with cocoa powder or cinnamon and sugar; serve with vanilla ice cream.
Serving
I could not take pics of this, but I served it with a big dollop of Nutella at the top and warming it again to let that Nutella melt and have more gooey chocolate :)

It happens only once in a blue moon that hubby cooks. So, few days ago was one such day. I was out taking my older one for class and running errands and requested hubby to make something. I had the recipe in my bookmarks list. So, asked him to get that one.
Got to say, impressive. He did a great job. The recipe was a hit and he probably ate 1/4 of the curry while he left it to cool off a bit before serving... lol

Did the title intrigue you enough? If not I am pretty sure after reading this recipe, you will surely give this a try.
Somehow since I have started baking a couple of months ago, I have been obsessed with bananas, in baking. I am not a banana fan. I mean if someone asks me to eat banana, it will be a huge task for me to eat it, and finish it. But, somehow I have always loved that wonderful sweet smell of banana in baking. So most of my baking these days include banana in some or other other way. For example, Eggless Chocolate and Bread Pudding, Best Chocolate Banana Bread Ever, Soft/Moist Eggless Banana Cake, Banana Strawberry Muffins, Quinoa Cake Stix.
I am pretty sure most of you in the blog world know all about Champa and recognize as one of our baking queens as that is what she is to me. I refer to her blog for all my baking needs. She has everything from basics of baking to charts of conversion to baking mixes to wonderful baking recipes along with other non baking stuff. If you have never visited her blog or new to blog world, please make sure to visit her and user her as a guide for all baking needs.


So, this is a recipe I had bookmarked from Champa in June last year and this last weekend is when I got time to make it. What fascinated me to this recipe is of course banana, but on top of that, it is eggless (I have no aversion of cooking with eggs, but if I can avoid it why not as I don't eat eggs in my daily life other than for baking), it is sugarless (banana's sweetness and addition of honey does the work) and it is absolutely butterless and believe me when I say that you won't miss it a bit when eating the bread. And, to top all the above said things, there are chocolate chips. For some chocoholics like me, that is surely the cherry on the top :)
Another wonderful thing about this recipe is that you can bake it into a bread, a cake or even muffins. So, go with your what your heart tells you at that time. You can enjoy it as a perfect breakfast or evening snack or even dessert with some ice-cream.

Another month and another wonderful Sweet Punch time. This time, we had to re-create Ria's Buttery Jam Tart.
It was so much fun making them. Took me hardly 5 minutes to put them together, another 20 min. for baking them and then the last difficult 30 min. of waiting for it to cool down for us to eat them. Results, we loved them. They were very buttery and the tart themselves were crumbly.
Buttery Jam and Nutella Tarts
Ingredients
All Purpose Flour - 1 cup (this will make about 5 muffin sized tarts)
Butter - 1/2 cup (chilled)
Baking Powder - 1/2 tsp
Jam - 5 tbsps
Nutella - 2 tbsp
Preparation
- Pre-heat your oven to 360 degree Fahrenheit
- Sift the flour and mix butter to it slowly. You will have a smooth dough in less than a min.
- Divide them in equal sized 5 balls.
- Prepare your mini tart pan or muffin pan with liner (as I did not have a tart pan).
- Flatten each ball you made earlier a little and put then in muffin/tart pan to take the shape of the pan.
- Fill some tarts with jam till they are about 3/4 full.
- The tarts that you want to fill Nutella with, bake them without any filling.
- Put your tarts/muffins in the oven and bake for about 20 min.
- Let them cool completely before you take them out.
- Now, fill the tarts that are empty with Nutella. You can let it set and then fill it again with some chocolate ganache per your liking.
Serving
I am guessing you will grab them right out of oven, I mean after they cool down. We would have loved them with ice-cream or whipping cream, but we finished them even before we could get to that stage... lol

I wanted to try something that I hadn't tried yet. And, now that I am this pattern of trying to bake, my eye caught the recipe of my favorite savory bread on earth, which is Spicy Focaccia Bread. It is my absolute favorite. Every time I go out for hot panini or sandwich, this is the bread I request it on. I simply love the texture and how nice it is in my mouth. If you have never tried it, you don't know what you are missing when it comes to savory breads.
I have used her recipe as it is with the exception of adding cilantro (because I forgot, dumb me) and chilies on top as my kids and hubby do not like it very spicy. My husband, who is usually a big critic, loved it and wanted to try another slice even though he is watching his diet. It took me just 5 minutes of prep works, 1 hour of bread rising (remember like Charishma says, it doesn't rise a lot like other yeast breads) and thereafter 40 minutes of baking @ 375 degree F. Thanks Charisma for this wonderful recipe :)

Today, I am here with the easiest brownie recipe ever. I mean just 4 ingredients, now how can you beat that, right? And, guess what it has Nutella in it. Now, I have to tell you that till about 3 years, I had no clue what Nutella as and once I got introduced, being a chocoholic that I am, it got hooked on to it right away.
