Banana Strawberry Muffins for Sweet Punch August

Hello Friends,

I think I am the last person posting this or at least the last few :)

I firstly would like to thank Sweet Punch team for hunting for such delicious and mouth watering recipes for us to bake every month. I thoroughly enjoyed baking and eating this month's sweet punch, which was Banana Strawberry Muffins, for which the recipe source was our favorite Joy of Baking. I have used the recipe as it is, so not going to re-write the recipe here. Please follow the link and enjoy the recipe @ her site :)

Soft, moist and loved those strawberry pieces in between. You enjoy the pictures too :)

Eggless Banana Pancakes with Condensed Milk Syrup

Hello Friends,

Here is a Tuesday I was waiting for as for the first time I have something in my drafts that I am dying to share as we as a family enjoyed it thoroughly and will be a regular breakfast for weekends :)

This is an Eggless Banana Pancakes from Srivalli. The moment I saw, I knew I had to make it as I could almost taste it after I read her description. Please do check out the link to get the recipe and the preparation. I used the exact recipe, so will not retype it here. Do you notice the white syrup rolling down the pancakes? It is pure heaven, Warm Condensed Milk sprinkled all over on warm, sweet, soft, moist pancakes. Are you hungry yet? Did I tempt you enough?

Rava Pongal - रवा पोंगल (Semolina and Split Moong Bean Savory Porridge)

Hello Friends,

I picked this recipe from my blogger friend Prathibha. You have to check her blog for the recipe. My pictures are absolutely nothing compared to hers. Hers were drool-worthy. We all loved it and this would be a regular breakfast/lunch for us. Thanks Prathibha for the delicious recipe.

I noticed that these days my pictures worse than before. Now that I think of I know the reason. I am always in a hurry to click pics as I have my 19 month old running after me all the time. Sometimes while I am taking the pic itself, he would want to eat it or taste it and I literally have to run from him to get picture. So, I grab my camera and click whatever I can in whichever light condition. I am sure many of you can relate with me and excuse my bad photography.

Sanja - A Semolina Savory Pudding with Buttermilk - From Sayali's Blog

Hello friends,


It is so nice to post a real recipe after about 6 weeks' break of not posting anything.


I also wanted to share and brag about a giveaway that I won, lol. It was organized by Food Lovers and I happen to win it. Thanks dear for such wonderful gift. We are all loving it :)




Today, I have an unusual upma (Savory Semolina Pudding) recipe which involves adding buttermilk in the recipe instead of plain water. She says, Sanja is a marathi word and she learnt it herself from her mother in law. Please do visit her blog for this delicious recipe and many more like this from her.




This is a recipe I had bookmarked from Sayali's Blog since May 2010, i.e., when she had posted it. I loved it right away, so thought of making it today. It had a very different taste from regular upma in a good way. Loved the slight tangy taste of buttermilk in it. Loved the color and everything about it.

Left Over Idlis with Pappula Podi - Tried from Sailu's Kitchen

Hello Friends,


This is one of the quickest turnaround on a bookmarked recipe. Actually, it so happened that I was checking my Google Reader for all blog updates (As I do it everyday) and saw that Sailu had posted this recipe. Do I even need to introduce Sailu. She is like maha chef of blog world. I simply adore her blog and have been following her blog even before I had my own blog. 


Coincidentally, I had leftover idlis from previous day, so I immediately (within 2 hours of reading this, if you can believe that) conjured up delicious Left Over Idlis with Pappula Podi recipe. It was mouth watering. I have had left over idli upma, but this was a nice twist to it. I used my home made (meaning already made and did not use her podi recipe) recipe which I had posted here. Sago - Rava - Carrot Idli (Steamed Savory Cakes) - T & T from Madhuri and some awards !!!

Hello friend,


I am so happy to have tried this one as it came out very very well. You have to visit Madhuri's place for her wonderful collection of recipes. I simply love her blog as I cannot put it in any other words. She is sooooooooooooooooooooo good and helpful. Her blog's best feature (after delicious recipes) are her pictures. She shoots simply drool-worthy pictures :)


OK, now for this Sago - Rava - Carrot Idli, go check her blog for her delicious recipe and beautiful pics. Mine are nothing compared to hers. Thanks Madhuri for introducing my family to this mouth-watering idlis.  They came softer than usual rava idlis. There are in my family to stay. Check out the color enhancement with addition of carrots. And guess what, those were my home grown carrots :)

Ankurit Moong ki Tikki - अंकुरित मूंग की टिक्की (Sprouted Moong Patties)

Hope you all had a wonderful weekend. I did, enjoyed some sun and got sun burns as well. Sorry for keeping you all wondering as to what I did with my sprouted moong posted in my last post. So, here is what I did. I made these yummy looking tikkis out of it. Hope you all will like it.


These tikkis are so healthy that you can even serve them breakfast and don't have to feel bad about having tikkis at all :)


Ankurit Moong ki Tikki - अंकुरित मूंग की टिक्की (Sprouted Moong Patties)


Ingredients
Ankurit Moong (Sprouted Moong) - 2 cups (you can use regular overnight soaked green moong as well)
Hari Mirch (Green Chillies) - 2
Adrakh (Ginger) - 1 inch piece
Lal Mirch (Red Chilli) Powder - 1/2 tsp
Dhaniya (Coriander) Powder - 1/2 tsp
Jeera (Cumin) Powder - 1/2 tsp
Bread Crumbs - 1/2 to 3/4 cup
Onions - 3/4 cup finely chopped.
Salt - as per taste
Preparation

  • Grind everything except bread crumbs and onions coarsely or fine per your liking. Add as little water as you can as you don't want it to be runny.
  • Add onions and 1/2 cup bread crumbs to it and mix well. Add more bread crumbs to make it more binding so that you can make a ball out of the mixture and form a tikki.
  • Take a non stick hot griddle and fry these tikkis with as little oil as you can. I like to use zero calories oil sprays for this kind of frying. Alternatively, for those of you who have appam pan, can try it in that. I have never tried that method, but I am sure, it will be lovely.
  • Fry till they are golden brown on both the sides till they are golden brown. Remember, this is ground uncooked moong, so it should be fried at low heat for longer period than usual aloo tikkis.

Serving
Serve them with some favorite chutneys or sauce or just plain old dahi.

Pyaaz Ki Kachori - प्याज की कचोरी (Onion Filled and Fried All Purpose Flour Balls) and An Award

Hello Friends,


It was a hectic weekend. I made these on Saturday and now getting time to post it here. It is one of our family favorites. When we were in India, never had to made them at home as we get them so commonly anywhere. They are like regular breakfast in Rajasthan along with some yum doodh-jalebis. They used to be super delicious, I cannot really get that taste at home, but again they (they being the kachori walahs) are super experts and have been doing it for all their life. But, then again, home made has a difference taste which cannot be found in the market. I am contradicting myself here... lol


Pyaaz Ki Kachori - प्याज की कचोरी (Onion Filled and Fried All Purpose Flour Balls)


Ingredients
For Dough
Maida (All Purpose Flour) - 2 cups
Water - 1 cup
Salt - as per taste
For Pyaaz Masala
Onion - 2 cups (finely chopped)
Kalonji (Nigella Seeds) - 1 tsp
Saunf (Fennel Seeds) - 1 tsp
Tej Patta (Bay Leaf) - 2-3
Besan (Chick Pea Flour) - 2 tbsp
Lal Mirch (Red Chilli) Powder - 1 tsp
Dhaniya (Coriander) Powder - 1 tsp
Salt - as per taste
Oil - 1 tbsp
Preparation
For Dough

  • Mix the dough ingredients and make it into a nice soft dough and keep it covered till filling is prepared.

For Pyaaz Masala

  • Take a pan and heat oil.
  • Add kalonji, saunf and tej patta in it and fry till they start spluttering and nice aroma comes from it.
  • Add onion and salt and fry till they are nice and brown.
  • Add Rest of the ingredients, mix well and fry for another 2-3 minutes.
  • Let them cool down completely before assembling Kachoris.

For Kachoris

  • Take a small ping-pong sized ball and roll them into a small poori size circle.
  • Take 1 tbsp pyaaz masala and keep it in the middle of the poori.
  • Now, pull the end of the poori above the masala make it into a bowl (you may have to pinch the extra dough to not make it too thick in the middle).
  • Make all kachoris together and then fry them in hot oil till golden brown in batches of 4 or 5 depending on the quantity of oil you have heated.

Serving
Usually they are eaten warm with sweet and sour chutney (Tamarind and Date Chutney) and dahi (Yogurt).

My 50th Post, Eggless Pancakes with Cinnamon Apples and Cheese Pennies

Guess what, this is my 50th post. Wow, not sure how I reached here. It looks like I just started yesterday and it is already 50th one. 


Another weekend, another Saturday. Wanted to make something different in the breakfast, not the usual upma or poha or cereal. So, thought of making pancakes from scratch. I usually cheat and eat the frozen kind or make it from ready made batter.


Glad to say that the results were wonderful and we all loved it, especially the topping.


Eggless Pancakes with Cinnamon Apples Topping


Ingredients
For Pancakes
All Purpose Flour - 1 cup
Milk - 1 cup
Butter - 1/4 cup melted
Baking Powder - 1 tsp
Sugar - 2 tsp
Salt - 1 tsp
Vanilla - 1 tsp
For Topping
Apples - 2 medium sized cut into 1 inch square pices (you can also cut them into slices)
Cinnamon - 1.5 tsp
Brown Sugar - 2 tbsp
Butter - 2 tbsp
Preparation
For Topping

  • Take a wide pan and add butter
  • Once butter starts melting, add apples and let them cook for about 2 min.
  • Add brown sugar and cinnamon and cook them again for 3-4 minutes and take it off the heat.

For Pancakes

  • Whisk all ingredients of pancakes in a bowl well and let it rest for about 190 min. (make the topping while you let this rest).
  • Take a griddle and let it get heated
  • Sprinkle some oil in it and pour about 1/4 cup of batter to it.
  • Most of it will automatically spread out in a circular form. If not, feel free to spread it, but make sure you don't spread it too thin.
  • Let it cook on both sides on medium flame for about 2 min.

Serving
Take the pancakes in a plate and serve them with cinnamon apples topping in any way you like.


I was seriously surprised at how fluffy and soft they were without eggs in them. Next time, I will try for whole wheat flour and may be add buttermilk instead of milk.

Hare Moong Ka Cheela and Tag Award

Hello friends,


Another weekend, another Saturday and last night I was like ok, what do I prepare for Saturday breakfast, as I usually try to do something special, i mean prepare a breakfast, instead of usual waffles, pancakes, toasts, cereal with milk etc. :)


As it had been a while, I soaked green moong and thought of making moong dal cheela in the morning. Here is my recipe the way we do in our family :)


Hare Moong Ka Cheela - हरे मूंग का चीला (Green Gram Lentils' Pancake)


Ingredients
Hara Moong (Green Gram Dal) - 1 cup (washed and soaked in water overnight)
Onion - 1 cup (finely chopped) - adjust it as per your liking
Hari Mirch (Green Chillies) - 3-4 - adjust it as per your liking
Adrakh (Ginger) - 1 inch piece
Lahsan (Garlic) - 2-3 cloves
Lal Mirch (Red Chilli) Powder - 1 tsp
Haldi (Turmeric Powder) - 1 tsp
Salt - as per taste
Jeera(Cumin Seeds) - 1 tsp
Dhaniya Patti (Cilantro) - 1/2 cup (finely chopped)
Preparation

  • Grind together: soaked hara moong, adrakh, lahsan, hari mirch and jeera (if you prefer leave hari mirch to be added later and not grind it)
  • Do not make the paste too runny, it should be around idli batter consistency.
  • Add the remaining ingredients mentioned above in the ground paste.
  • Heat the tawa and add little oil.
  • Take a big spoonful of batter and spread it on the tawa to the desired sized circle (it usually doesn't come as a perfect circle, due to all the chunky ingredients in it)
  • Pour little oil/butter on the sides and on top of the cheels and cook it till both sides are nicely browned.

Serving
In my house, we usually eat it with dahi (yogurt, in Rajasthan, pretty much everything is eating with dahi on the side) or some hot and sour chutney. 1 cup of soaked dal, made 5 cheela of the size shown in the picture and so it was perfect for my husband, my son (5 yr. old) and I. Believe me, they are heavy, so you cannot really eat more than 2, we were struggling even with 2... lol. My husband was later sad that I only soaked 1 cup and now there was no more left to be eaten the next day or later in the day. So, that is how much this is loved in our household.

And, here is one of my favorite picture. It was really difficult to choose this as I have so many favorites and I did not want to overwhelm everyone with hundreds of pictures. This was taken about 1.5 years ago  during our trip to India. This is one of the famous tourist places in and around Jaipur. It is called "Jal Mahal".
