Flavors of Rajasthan Event - My Entries

Hello All,


I was so happy when I saw this event announcement called Flavors of Rajasthan @ Sonu's blog. The series was original started by Nayna.

Giveaway I won and the Gifts I Received

Hello Friends,

Today I am here with a non-recipe post. Many of you may know that I had won Giveaway @ Creative Sanyukta's Bloggy Birthday a few weeks ago.

I received my precious and most awaiting gifts with a lovely note from Sana over the weekend. Thank you so much Sana, I love you. I am going to enjoy them. They are really sharp knives but with their own cases, so that is neat and color is what I always love in them instead of same old boring black or silver knives. Amazing looking wooden board too, I have recently started loving wooden boards. I had received from my dear friend Anu when we met for a blogger's meet and now this one, so I am a happy person when it comes to cutting :)

Eggless Banana Pancakes with Condensed Milk Syrup

Hello Friends,

Here is a Tuesday I was waiting for as for the first time I have something in my drafts that I am dying to share as we as a family enjoyed it thoroughly and will be a regular breakfast for weekends :)

This is an Eggless Banana Pancakes from Srivalli. The moment I saw, I knew I had to make it as I could almost taste it after I read her description. Please do check out the link to get the recipe and the preparation. I used the exact recipe, so will not retype it here. Do you notice the white syrup rolling down the pancakes? It is pure heaven, Warm Condensed Milk sprinkled all over on warm, sweet, soft, moist pancakes. Are you hungry yet? Did I tempt you enough?

Best Chocolate Banana Bread Ever

It has been a few days since I posted something, just too busy with summer activities. Here is a simple yet the best Chocolate Banana bread I have had ever. This is a recipe I got from a colleague, Jerri, who is such a great baker and I love that I get to taste them very often.. lol

I am very very sure that if you try, you will thank me and her both and save this recipe forever. Technically this is a bread recipe, but as I did not have a loaf pan, I tried it as a round cake and loved it. So, you can make it into a cake with some chocolate frosting or a bread and serve it at breakfast with some butter on it. Notice those nice chocolate chips peeking from the slice? This is all I could take picture as the cake was gone within minutes and I cannot even tell you how moist it was, just amazing.

Now, without further ado, here is the recipe from Jerri to me to you.

Best Chocolate Banana Bread Ever
Ingredients

Butter - 1/2 cup, softened 
White Sugar - 1 cups
Eggs - 2
Bananas - 3 pureed
Vanilla Extract - 1 tsp
All Purpose Flour - 1.5 cups
Baking Soda - 1 tsp
Unsweetened Cocoa Powder - 2 tbsp
Sour Cream - 1/2 cup
Semisweet Chocolate Chips - 1/2 to mix in the batter and about 1/4 cup more to just fold in
Preparation

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a loaf pan.
  • In a large bowl, cream together margarine, sugar and eggs. 
  • Stir in bananas and vanilla. 
  • Sift in flour, baking soda and cocoa; mix well. 
  • Blend in sour cream and chocolate chips. 
  • Right before pouring in pan, fold in those extra chocolate chips (totally optional step).
  • Pour batter into prepared pans. 
  • Bake in preheated oven for 60 minutes or until a toothpick inserted into center of a loaf comes out clean. 

Note: You can substitute 1/2 cup of sour cream with a combination of 1/4 cup sour cream, 1/4 cup of buttermilk an 1/2 teaspoon of baking soda.  Be sure to start the buttermilk and baking soda combination a few minutes prior to mixing with the other ingredients so they react.
Serving
Serve it with your favorite ice-cream on the side or top. You can also use some frosting. In my case, I just enjoyed it as it is :)

Tamatar aur Moongfali Ki Chutney - टमाटर और मूंगफली की चटनी (Tomato Peanut Chutney)

Here is a chutney that got a sneak peak with my Mixed Flour Instant Dosa. I saw this recipe on Apu's blog and immediately wanted to try it out.


I tried it and I am hooked on. Amazing and absolutely perfect. As I used her recipe as it is, I am not going to write it here. Please visit her blog to check it out. Tamatar aur Moongfali Ki Chutney - टमाटर और मूंगफली की चटनी (Tomato Peanut Chutney) is an amazing combination of tangy tomato, nuttu peanuts and spices. I felt like I could use it for idli/dosa and also hot rice. Check out the recipe and enjoy it !!!

Mixed Flour Instant Dosa

Hello Friends,


Another Blogging Marathon week. It is BM # 6 and I am doing Regional Specials again and will be posting 7 days of Rajasthani Delicacies. Today is Final Day 7 and here is my regional special for this day.

I was paired up with Kalyani and as she didn't have any Rajasthani Specials, I chose to pick a traditional South Indian Special and here is an amazing recipe of Mixed Flour Instant Dosa.

It caught my eye as it was an instant one and no need to soak, grind or ferment and all that lengthy process. So, without further ado, here is the recipe.

Mixed Flour Instant Dosa
Ingredients
Maida (All Purpose Flour) - 1 cup
Gehun ka Aata (Whole Wheat Flour) - 1 cup
Sooji (Semolina) - 1 cup
Chawal ka Aata (Rice Flour) - 1 cup
Tempering
Red Chili/Green Chili - 2, broken in pieces (for dry red one) or finely chopped (for green one)
Cumin Seeds - 1 tbsp
Mustard Seeds - 1 tbsp
Asafoetida - 1 pinch
Curry Leaves - a few leaves
Oil - 1 tbsp for tempering and more for making dosa
Preparation
  • Mix all dry flours in a big bowl.
  • Add 1 tbsp oil in a non-stick pan (small one) and add all tempering ingredients to it.
  • Once the seeds start spluttering, mix it in the mixed flour.
  • Add enough water and make it into a pouring consistency batter (thinner than pancake).
  • Heat griddle till hot.
  • Brush the griddle with some oil and then pour a big spoonful (1/4 cup or so) and spread in a circular motion till it is thinly spread like a crepe (it won't be as thin as crepe, but in that shape and motion).
  • spray some more oil on the sides and top of it. 
  • Cook till you start seeing the dosa separating from the griddle. 
  • Flip it and cook it on the other side as well till golden brown.
Serving
Serve it with your favorite chutney or podi.

Rajasthani Dal Pakora - राजस्थानी दाल पकोड़ा (Rajasthani Lentil Fritters)

Another Blogging Marathon week. It is BM # 6 and I am doing Regional Specials again and will be posting 7 days of Rajasthani Delicacies. Today is Day 6 and here is my Rajasthani Special for the same.

Here is another delicious and addictive street side food or appetizer/snack that we get in Rajasthan. In Jaipur and other cities of Rajasthan, we don't even call it "Pakoda", but it is rather just called as "Dal Ke". It is a mix of 5 different lentils/pulses/beans and spicy and super yummy !!! They are crispy on the outside and soft in the inside. They are very filling too and I don't even have to tell you how protein packed they are :)


I thought of adding this later. For some of you, who do not know what chawli dal is, here is a pic that I took.

Rajasthani Dal Pakora - राजस्थानी दाल पकोड़ा (Rajasthani 
Lentil Fritters)
Ingredients
Peeli Moong Dal (Yellow Split Moong Bean) - 1/4 cup
Sabut Moong (Green Whole Moong Bean) - 1/4 cup
Dhuli Urad Dal (Split Black Gram) - 1/4 cup
Chawli/Chori Dal (Adzuki Beans) - 1/4 cup
Chana Dal (Split Bengal Gram) - 1/4 cup
Green Chilies - 3-4, finely chopped or ground, as you prefer
Ginger - 1 tbsp, minced or ground, as you prefer
Garlic - 1 tbsp, minced or ground, as you prefer
Saunf (Fennel Seeds) - 2 tbsp, crushed slightly
Dhaniya (Coriander) Seeds - 2 tbsp, dry roasted and crushed slightly
Cilantro - 1/4 cup, finely chopped
Heeng (Asafoetida) - 2 pinches
Salt - as per taste
Oil - for deep frying
Preparation
  • Rinse and soak all dals together for 4-6 hours.
  • Grind the soaked dal coarsely. If you are grounding green chili, garlic and ginger, you can grind them with dal.
  • Mix the rest of the ingredients (except oil) to the ground dal mix.
  • Meanwhile, heat oil in a heavy bottomed pan or wok.
  • Take a handful or ground batter and slowly slide it in the hot oil to make the fritters. Depending on your comfort level, you can use your hand or a large spoon for this work.
  • Deep fry them well till they are golden brown.
  • Drain them on paper before serving.
Serving
Serve it with your favorite chutney or sauce. Traditionally, it is served with spicy cilantro chutney.
