Another Blogging Marathon week. It is BM # 6 and I am doing Regional Specials again and will be posting 7 days of Rajasthani Delicacies. Today is Day 5 and here is my Rajasthani Special for the same.
Rajasthani Lapsi - राजस्थानी लापसी (Broken Wheat Porridge)
Ingredients
Dalia (Broken Wheat) - 1 cup
Ghee (Clarified Butter) - 3/4 cup
Sugar - 3/4 cup
Water or Milk - 3 cups, it is your choice, I used about 3/4 milk and 1/4 water
Almonds and Raisins - 1/4 cup
Preparation
- Heat ghee in a heavy bottomed pan.
- Add dalia to it and roast till golden brown.
- Add milk/water that you are using and cook dalia on low heat till it is cooked well.
- Add sugar to it and let it melt completely.
- Mix in raisins and almonds and take it off the heat.
Serving
Serve it warm as a dessert.

Yumm lapsi - did u know Gujarati cuisine also has lapsi and it is considered auspicious so its made on occasions like housewarming and stuff...

Is this Rajasthani dish? One of my (Gujrathi) neighbors used to share with me whenever she prepared lapsi. She used to prepate it with loads of ghee and nuts giving me a heart attack whenever I looked at it. :)
She was a Rajasthani married to a Gujarathi and I assumed it was a Gujju dish.
It looks so creamy and delicious and I love that it's studded with nuts. YUm!

I love this! So simple and completely beautiful.
I often eat dalia with milk and sugar in breakfast but I have never eaten lapsi with milk.Definitely it will taste rich with milk.
i make it often for my son for breakfast healthy and nutritous... the bowl looks so good

Looks great, and a great alternative to oatmeal (even steel cut). Actually, I'll be steel cut oats would cook in a similar way and be quite tasty as well (they're not as mushy as flattened oats).
I've cooked with wheat buds before but it takes a really long time to cook - I guess I just need to get "cracked wheat" or put it through a blender to break it up a bit.

Sorry Priya - took some time - had to get the recipe from mom :)
So boil water with jaggery and a little desi ghee together to form a syrup. Coarse wheat flour is given a 'moun' of desi ghee and mixed well. then its added to the hot jaggery liquid and cooked on slow heat till done while stirring. To serve - another big dollop of desi ghee is mixed into it :)
