Makai Jajaria मकई जजरिया - Makai Ka हलवा - मकई का हलवा (Corn Pudding)

Now, onto today's recipe. This is a halwa (pudding) made commonly in Udaipur region of Rajasthan. Honestly, I just heard about it, but never tasted or saw this before. So, looked up for this on net and got this recipe from Tarla Dalal. We enjoyed it big time, so go ahead and enjoy it virtually and try to make it as well. You won't regret :)

Makai Jajaria मकई जजरिया - Makai Ka हलवा - मकई का हलवा (Corn Pudding)


Ingredients
Corn - 1.75 cups (or 1 tin of corn or if you are using fresh, use kernels from 2 cobs)
Milk - 1 cup
Water - 1/2 cup
Sugar - 1/2 cup
Green Cardamom (elaichi) powder - 1/4 tsp
Ghee (Clarified Butter) - 2 tbsp
Pistachios - Sliced or chopped for garnishing
Preparation
  • Heat the ghee in a non stick pan, add the grated corn and cook over a slow flame for 10 to 12 minutes while stirring continuously till the mixture turns light brown in colour.
  • Add the milk and water and simmer till the liquid has evaporated, stirring occasionally.
  • Add the sugar and cardamom powder, mix well and cook till the sugar has dissolved.
Note: This won't be as dry as whole wheat or semolina halwa, but little softer than that.

Serving
Serve it as a wonderful dessert after any lunch or dinner. Traditional this is served hot on corn leaves, garnished with the sliced pistachios. But, as I didn't have them, we served them in regular dessert bowls :)

Priya (elaichi), I have not tried creamed corn, so, feel free to try and may be reduce milk quantity. Let me know how it comes :)

Ayeesha, yes, dear, the color of the halwa is all natural. I haven't added anything for the color.

What a coincidence...I get regular emails from Tarla Dalal's website as I have subscribed some few years back. Just today I saw an email with all corn recipes...this halwa was one of them :-).
