A very easy preparation of eggplant that my mom specializes in and I love it. My husband doesn't like eggplant/brinjal, so I get to cook it not that frequently, but I have decided to use it more often so that my kids get used to it.
Baingan Ki Sookhi Sabzi बैंगन की सूखी सब्जी - Vankaya Pachhi Kharam (Eggplant Fry with Green Chilli - Coriander - Cumin Powder)
Ingredients
Baingan (Eggplant/Brinjal) - 2 cups chopped or sliced as you prefer
Haldi (Turmeric Powder) - 1 tsp
Salt - as per taste
Rai (Mustard Seeds) - 1 tsp
Jeera (Cumin Seeds) - 1 tsp
Dhaniya Patti (Cilantro) - For garnishing
Oil - 2 tbsp
To Dry Grind
Green Chillies - 2-3 as per your taste
Dhaniya (Coriander Seeds) - 1 tbsp
Jeera (Cumin Seeds) - 1 tbsp
Preparation
Serving
Serve it warm with either rice or roti/paratha.

Preparation
- Dry grind into a coarse powder everything under "To Dry Grind".
- Take a wide pan and add oil to it.
- Add rai, jeera and let them splutter.
- Add chopped eggplant, haldi and namak and mix well.
- Cover and cook for 2-3 min (make sure they don't become mushy).
- Uncover and mix the desired amount of the dry powder (made above, save the rest for future use).
- Fry for 3-4 minutes.
- Sprinkle dhaniya patti and mix well.
Serving
Serve it warm with either rice or roti/paratha.

I agree that you should go ahead and make veggies like brinjal even if ur hubby doesn't like them. His taste will change over time and he will start to be ok with them (even if it takes month or years.) Cheers!

Eggplant is one such veggie which can be cooked with lots of variations besides potato. Isn't it?
I too was not a great fan of eggplant. I used to eat it when I was a kid, stopped later and again relearnt to love it after I had kids, to show them that everything on the plate needs to be eaten.
My daughter loves it now. :)

This looks like the recipe has used much more oil than the recipe says. Is that true? I've never been able to get this kind of color with baingan without a lot of oil. It all sort of turns into mush. What's the secret?
Would love to finally learn how to make delicious baingain like your picture. I've tried your method, unfortunately mine doesn't look half like yours.
