Malai Kulfi (Quick Way)

With summer coming our way, this is the best thing to eat as a snack in the evening or in the afternoon after lunch as a dessert. We all love it. I made it over the last weekend. My husband was ready to drink the unfrozen liquid and not let me make it into a kulfi... lol


This is a quick way of making kulfi. I will post the proper from the scratch kind of, long recipe later.


Malai Kulfi - मलाई कुल्फी (Heavy Cream Cardamom Indian Ice cream)


Ingredients
Heavy Cream - 2 cups
Condensed Milk - 1 cup
Milk Powder - 1/4 cup
Ilaichi (Cardamom) Powder - 1 tsp
Sliced Almonds - 1 tsp for garnishing
Preparation
Take heavy cream in a heavy (thick) bottomed pan and let it come to boil.
Add condensed milk and milk powder, mix well and let it also come to one boil (keep stirring).
Simmer it on really low setting till it starts thickening a bit.
Add cardamom powder and mix well.
Turn off the gas and let it cool down completely.
Pour them in mould (if you have) or in a freezer safe container and let it freeze at least 6-8 hours or overnight.
Serving
Take it outside and keep it in room temperature at least for 5 minutes before serving. If you are using mould, take them out of it and server them. If you froze it in container, feel free to scoop it out and serve them by garnishing sliced almonds on it.


My kulfi moulds were somehow not working properly (i mean I had trouble getting the kulfi out of it), so I used the container inside.


Note: You can add coarsely ground pistachios instead of cardamom to make pistachio kulfi or puree or mango to make mango kulfi. Basically, you get the idea. Change the flavor to make it whatever you like the best. We simply love the malai kulfi :)

Lovely recipe!Should be an occasional indulgence due to all that heavy cream and condensed milk..like on a wedding or some festive occasion!

This is far from quick recipes. I have tried another malai kulfi recipe which involves no heating at all. Just warming in the microwave. I cannot imagine myself making the scratch version anyway. Looks sooo good that I want to make it and eat.

@BangaloreBaker, I know what you mean by this is not the quick way as there are other quicker ones ;) But, this is quicker than the long process one...lol
