This is the 30th volume of Bookmarked Recipes - Every Tuesday Event. You can find recipes for all other volumes here. where we all with link the blog posts where we posted a recipe that we had Bookmarked from another blog or book or magazine or simply from a TV show written on a blank paper. It would be great to know when you bookmarked it (date), if you would like to share it, not mandatory.

Remember, you will have to post that recipe on Tuesday, 1st March 2011 and no archived or past recipes are allowed to be entered in this event. You can make that recipe any date or time, but it has be posted on Tuesday. Hope that is clear :)

Important Note: The recipe has to be from another source (blog, magazine, friend, noted from somewhere in your diary etc.) and importantly as this is a vegetarian blog, it has to be a vegetarian recipe, no kind of meat allowed. Eggs are allowed, but only in baking.

Guest Hosting - MEC (Microwave Easy Cooking) - Rice Dishes

Hello Friends,


Here is another wonderful event that I have always been wanting to host, just to encourage myself to use microwave for more and more of my cooking. I do very rare cooking in microwave. You can call me old-fashioned. But, I know and I have seen from many of you amazing bloggers, how one can cook an entire meal in microwave. I hope and wish I can do that one day.


I would like to thank Srivalli for giving me this opportunity. Check her blog for future opportunities and past roundups. This is one proud event going on for more than 3.5 years now.


This month's theme is going to be "Rice Dishes". All you have to do is cook the basic rice recipe or any rice related dishes (vegetarian only, no meat or seafood or eggs allowed). 
Here are the simple rules:
  • Cook any item based on the month's theme in a Microwave and post it on your blog from now till the last date of the month. It has to be strictly vegetarian, no meat or seafood or eggs allowed. 
  • Remember, it has to be presented as Rice Dish and not something made out of rice dish, meaning not like a rice burger etc., hope you know what I mean. The rice should be as rice in the dish and not mashed or pureed. If you have any doubts, please feel free to email me or leave me a comment here.
  • Multiple entries are allowed.
  • The very IMPORTANT RULE is that ENTIRE COOKING NEEDS TO BE DONE IN MICROWAVE. Food processor or grinder or mixer can only be used for food processing, but no stove top or oven use at all.
  • Old archived entries are allowed, if updated with this announcement link. No need to repost it.

Adai - दाल दोसा (Rice and Lentil Crepes)

Hello Friends,

Here is a nice recipe that I learnt from my friend Raji. It is such a blessing to have these recipes for vegetarians like us who solely depend on lentils or beans for our daily doses of protein. This is such a healthy lunch/dinner or even snack at times. And, I specially varieties of crepes (dosa) like these as they don't need any overnight soaking and fermenting and are quick to prepare and still super yummy to taste.

Adai - दाल दोसा (Rice and Lentil Crepes)
Ingredients
To Soak
Rice - 1 cup
Chana Dal  - 1 cup
Toor dal - 1/2 cup
Yellow Moong dal - 1/2 cup
Urad dal - 1/2 cup
Dry Whole Red Chilies - 4-5 or as per your taste
To Grind
Coconut - 1/2 cup
Hing (Asefoetida) - 2-3 pinches
Salt - as per taste
To Garnish
Onions - 1 cup, finely chopped
Cilantro - 1/2 cup, finely chopped
Preparation
  • Soak the ingredients under "To Soak" in enough water (to cover and about 1-2 inches on the top, meaning such that it is always soaked all the time) for 3-4 hours.
  • Drain and grind with things listed under "To Grind" coarsely. It is to remain coarse and not very smooth. 
  • Make sure the batter is not very thin, it has to be that of cake batter or even a little thicker. You can always thin it when making crepes, if it seems too thick.
  • Now, there are 2 options, some people like to add garnishing in the batter and then make crepes or you can add garnishing after spreading the crepe. It is just that after adding onions in the batter, it gets little difficult to spread on the griddle.
  • Put a non-stick the griddle on the heat and let it heat completely before you make dosa. Adjust the seasoning and batter consistency.
  • Take about 1/2 or so cupful of batter and spread it evenly in a circle on the griddle. Remember it usually doesn't get as thin as your other regular dosas/crepes. 
  • If you did not add onion/cilantro in the batter, this is the time to spread it on the dosa and press it hard in the batter such that when you flip it, onion pieces don't get loose.
  • Add a little of oil, just to make it extra crispier. But, if you are health conscious, you can totally skip it.
  • Cook it nicely till golden brown on both sides.
Serving
This can be served warm with any kind of chutneys or nut/lentil powders or any combination of both.

Milk Rabri in Microwave

Hello Friends,


OK, if you are a milk product fan, you will absolutely go gaga over this one. I love my rabri and this was God Sent because of how easily you can whip it up.


I love Nivedita's blog and her recipes, but this is somewhere at the top due to the simplicity and ease of preparation. She served it cold, but I am sure you all know by now how I like mine warm, so I ate it warm, right out of microwave. Remember, it thickens as it is cooled down.
Milk Rabri in Microwave is something I would recommend all of you to at least give a try and I can guarantee you will fall in love with it and will make it at every occasion.

Eggless Chocolate and Bread Pudding from CL

Hello Friends,


I have been meaning to make this like forever, I mean since CL posted it. I am sure whoever saw this, was drooling like I did. I am chocoholic and recently I started making a lot of bread puddings and adding chocolate to this is like a dream come true for a chocoholic like me.


I am just going to list the ingredients here as I changed them slightly from CL (to suit my needs), but go check her blog for the process.


Eggless Chocolate and Bread Pudding



Ingredients


Whole Wheat Bread - 5 slices (CL used sweet bread, I used regular whole wheat, so increased sugar quantity, if you are using sweet bread like hers, use the same quantity of sugar that she did)

Milk - 2 cups

Banana - 1/2, pureed

Chocolate - 3 ounces

Butter - 2 tbsp

Sugar - 1/2 cup

Preparation


Serving

Do I need to even say this to you. Just dig in and enjoy it while it is still warm :)

Holi Special Recipes - More in next posts

I cannot believe that in about 2 weeks' time, we will be celebrating the festival of colors, HOLI. It is my all time favorite festival as we get to play like kids with colors, water and what not. It was a blast as a kid and I still enjoy getting covered in color and enjoyed all those delicacies that we usually make for holi. 


I remember as a kid, we never cared about colored hands and all that and used to get in house (ours and friends', didn't matter), every few minutes (while playing colors) and just grab the treats and run away again to play further. We had a rule where we grew up, we used to play with wet colors during the day time and then around 3-4 pm (whenever it was time), come home, take a shower and then get some rest and visit friends' places with family and then it was a strict dry color only playing. The houses used to be mess for next couple of days and it was fun to even recognize each other for next couple of days, due to layers and layers of colors. 


I know it is not holi yet and I am already typing all this. It is because I am sending the following delicacies from my blog to my new blogger friend Vatsala's very first event called Holi Aayi Re.
