Blogger is playing hide-n-seek with us. I can only expect to have this posted and then not loose it. Anyways, today is day 5 of blogging Marathon # 5 which was started by Srivalli. And, I am here with another delicacy, this time a dessert or street food of Rajasthan. Please enjoy !!!
For Kachori Dough
Maida (All Purpose Flour) - 2 cups
Salt - as per taste
Ghee (Clarified Butter) - 3 tbsps
Warm water - for mixing the dough
Oil - for deep frying
For Stuffing
Mawa/Khoa (Reduced Milk Solids) - 1.5 cups
Mixed Nuts - 3/4 cup (I used a mix of almonds, pistachio and cashews)
Sugar - 1/2 cup
Ghee (Clarified Butter) - 2 tbsps
For Sugar Syrup
Sugar - 2 cups
Water - 1 cup
For Garnishing
Nuts and few strands of saffron
Preparation
Serving
Serve it warm for either dessert or just a snack :)

Mawa Kachori - मावा कचोरी (Stuffed and deep fried bread with reduced milk solids and nuts)
IngredientsFor Kachori Dough
Maida (All Purpose Flour) - 2 cups
Salt - as per taste
Ghee (Clarified Butter) - 3 tbsps
Warm water - for mixing the dough
Oil - for deep frying
For Stuffing
Mawa/Khoa (Reduced Milk Solids) - 1.5 cups
Mixed Nuts - 3/4 cup (I used a mix of almonds, pistachio and cashews)
Sugar - 1/2 cup
Ghee (Clarified Butter) - 2 tbsps
For Sugar Syrup
Sugar - 2 cups
Water - 1 cup
For Garnishing
Nuts and few strands of saffron
Preparation
- Mix everything except water for kachori dough in a bowl.
- Now add warm water little by little and make it into a soft dough.
- Cover it with a lid or kitchen towel and let it stand for 30-60 minuets before using it.
- Meanwhile, take a non-stick pan and heat 2 tbsps ghee and fry mawa till nice golden brown.
- Add sugar and nuts to it, mix well and your stuffing is ready.
- In a separate pan, add sugar and water and let it form a syrup of one-string consistency.
- Now, heat oil for frying kachoris.
- Take a plum sized ball from the dough and roll it into a flat circle.
- Keep the stuffing in the middle of the circle and roll it from all sides into a ball and pinch the excess dough off.
- Flatten it slightly into a disc shape with your palm.
- Now, fry these to golden brown and drain on a paper towel.
- After excess oil is removed, dip them into sugar syrup for few seconds and take them out into a serving plate.
- Sprinkle some nuts and saffron and it is ready to be served.
Serving
Serve it warm for either dessert or just a snack :)

This mawa kachori has brought back some yum memories...I remember eating these in Jaipur and Kota and so much we liked them that I used to tell my brother who was then studying in kota to bring these back each time he came home...
