Bookmarked Recipes - Every Tuesday Event - 1st February 2011 (Volume 27)


Hello friends,

This is the 27th volume of Bookmarked Recipes - Every Tuesday Event. You can find recipes for all other volumes here. where we all with link the blog posts where we posted a recipe that we had Bookmarked from another blog or book or magazine or simply from a TV show written on a blank paper. It would be great to know when you bookmarked it (date), if you would like to share it, not mandatory.

Remember, you will have to post that recipe on Tuesday, 1st February 2011 and no archived or past recipes are allowed to be entered in this event. You can make that recipe any date or time, but it has be posted on Tuesday. Hope that is clear :)

Important Note: The recipe has to be from another source (blog, magazine, friend, noted from somewhere in your diary etc.) and importantly as this is a vegetarian blog, it has to be a vegetarian recipe, no kind of meat allowed. Eggs are allowed, but only in baking.

Tindora (Ivy Gourd) Fry

Hello Friends,


Another long pause and here I am again. These days, I am so fed up with my own cooking. And, so here is something that I saw in a roundup and I had to try it right away.


Swetha is this wonderful blogger who has delicious recipes. Please do check her blog and mainly this great recipe of Tindora (Ivy Gourd) Fry.




I prepared it as she said (word by word) and viola, it was a super hit. Usually, we make a simply (nothing but tempering and masalas) Tindora fry. Adding, onion and garlic to it really made a big difference and more delicious too. This is a keeper recipe. Thanks Swetha for this delicious addition in my cookbook :)


We enjoyed it with phulka (chapati - Indian flat bread). But, I am sure it would taste very well with warm rice as well.

Methi Paratha - Fenugreek Leaves Flat Bread

Hello Friends.


Today, I am sharing a very frequently and commonly made paratha in my household. Love that it is full of green leaves and of course can be eaten just like that with some yogurt or chutney/pickle.


Methi Paratha - मेथी पराठा (Fenugreek Leaves Flat Bread)
Ingredients
Whole Wheat Flour - 2.5 cups
Fresh or frozen Methi (Fenugreek Leaves) - 1 cup, in case of frozen, thaw it properly before adding and reduce the water quantity as it will be pretty wet itself
Red Chili Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1 tsp
Salt - as per taste
Olive Oil (or any other oil) - 1 tbsp
Water - 1 - 1.25 cups (add only little at a time)
Preparation

  • Mix all the ingredients first and then add water little by little to form a dough (not too firm, not too soft).
  • Heat a griddle (tava) on heat.
  • Dust your countertop or cutting board with some wheat flour and take a lemon size ball and roll it into a comparatively thicker flat bread than usual tortilla (roti/chapati) by applying some flour whenever needed.
  • Roast/Grill it on the griddle on both sides by applying little butter or ghee (clarified butter) till it is golden brown.

Serving
Serve it warm with some plain yogurt, raita (veggies in yogurt) and/or some chutney/pickle. Yum, yum, yum !!!

Easy Peasy Panang Curry

Hello friends,


I am sure many of you regular visitors to my blog have been wondering where I was. Just something personal I had to take care of and also I did not have access to a laptop for a while. So, missing in action. Sorry about it. Now, I will try to be regular.


So, after a long time, I cooked something special, which I always wanted to try, but was not gutsy enough as I know a lot of ingredients go in this curry. But, after I saw this recipe, I had to try it out :)


I did not have a few things in hand, so I did with what I could and let me tell you, I impressed myself.. lol.. if I can say so. It was not like restaurant perfect, but surely a great first try. And, great thing was that I could make it with things that I always have at home and did not need any special ingredient. So, without further ado, here it is, with slight changes that I made.


Panang Curry


Ingredients
Mixed Vegetables - 1.5 cups (I used frozen packet as I did not have usual veggies, which are thin carrot slices, celery, baby corn or any veggies basically you like)
Coconut Milk - 13.5 oz (usually one can)
Firm Tofu - 14 oz (you can lessen or increase based on how many veggies you are adding, to your liking)
Peanur Butter - 1/2 cup (smooth texture is preferred)
Shallots/Onions - 1 cup
Ginger - 2 tbsp, grated or thinly slices
Garlic - about 6 cloves, minced or finely chopped
Red Chili Paste  - 3 tbsp (or per  your liking)
Brown Sugar - 1/2 cup
Turmeric Powder - 2 tsp
Cumin Powder - 2 tsp
Kaffir Lime Leaves or freshly squeezed Lime Juice - 3 tbsp (in case of juice) and few leaves (if you are using leaves), I used juice only
Salt - as per taste
Olive Oil - 2 tbsp
Preparation

  • Take a deep and thick bottomed pan, add oil and heat it.
  • Add Shallots/Onions, Garlic, Ginger and cook till onions/shallots are tender.
  • Add peanut butter, turmeric, cumin powder, red chili paste and cook for about a min. or so (make sure peanut butter doesn't stick to the bottom).
  • Add the rest of the ingredients at this point, mix well till everything is smooth.
  • Cover and cook in low heat (simmer) till all veggies are cooked (it took about 15 min. for me).
  • Adjust any spices and let it simmer for few m ore minutes and it is all ready :)

Serving
I usually like my curries with warm rice, but this goes perfectly well with noodles as well and may be even rotis :) If you are eating with fried rice or something, this heat (mentioned in the ingredients) is ok, but if you are using white rice, you may want it bit hotter. But, always adjust spices, at the end.
