Coming to an End...

Hello Friends,

I am sure many of you have noticed that for more than one year, I have been on and off on the block, mostly off actually.

Somehow looks like I am either in that "block" everyone talks about in the blog world or just not finding enough time to do the cooking, shooting and writing about it. 

I still enjoy cooking and eating though, so don't get me wrong there, but it is the other parts that are not happening with me. Could be just the lack of will than anything else.

Thus, after much consideration and internal debates, I have decided to stop this blog right here.

What it means is I am not going to remove the blog or anything as obviously, it is a journal of my culinary journey and source of lot of good recipes I have tried and enjoyed with my family and friends, but I will now stop to write any more.

As you all know, there are 2 blog events that I initiated - Veggie/Fruit A Month and Healthy Me & Healthy Us. As I know all of us love these 2 events and I get continuous participation in these from all of you wonderful bloggers, I wanted to put them up for "Adoption". What it means is that, I want you to own it from here on and take it ahead. If you are a blogger, who would like to own the event from here on and take responsibility of it, please drop me a line and I will hand it over to you. Looking forward for my babies to be adopted and get a new home. It is sad and painful, but I am sure they will flourish in their home better.

Lastly, I have to thank each and everyone of you as without all of your kinds words and encouragement, I couldn't have done what I have. My achievement is more than mine yours. I also want to thank my husband and boys for their contribution in my blog and putting up with me :)

Strawberry Coconut Lime Juice

Hello Friends,

A new recipe I found (just on some of my searches, so, I do not remember the source and I modified the recipe a bit to suit my needs and what I had in my hand).

It is a very simple recipe and can be modified in anyway you want to suit your tastebuds. In anyway you try, it will be delicious, thirst quenching and very low in calories.

As it stands, these ingredients with quantities I mentioned, it is ONLY 77 calories (1 serving) and it is 1 serving per recipe without using honey. If you add honey, it is about 100 calories, which is still great. Now, it won't get any better than 77 calories for this yummy goodness. I hope I have inspired you enough to try it soon :)

Without further ado, here is the healthy and quick recipe.

Strawberry Coconut Lime Juice


Ingredients
Strawberries - 1 cup roughly chopped
Lime or Lemon Juice - 1 tsp or adjust according to your taste
Coconut Water  - 1 cup
Crushed Ice  - 1 cup (optional)
Chia Seeds - 1 tbsp. (again totally optional but gives such a good texture that you don't want to miss it)
Honey - 1/2 tbsp (optional)
Preparation
Real Simple. Blend Everything together and enjoy !!!
Serving
Just pour it in a glass of your choice and chill !!!

Note: Lemon Juice and Honey, please use both per your taste. First blend other ingredients, taste and then add lemon juice and honey as needed. You may not need both.

Brussels Sprouts Warm Salad

Hello Friends,

After a gap again, I am here with this delicious and warm salad that is super yummy, green (like everybody wants), not raw as I know not many of us like raw veggies and get this, only 129 calories per serving.

I know someone may say oh, 129 calories for salad might be too much, when you can get usual raw green veggie salad for under 100 calories. But, for that, I would say, just give it a try once and you won't complain for calories, as it is all healthy including the cheese.

It has 4.7 g of Fiber, 7.8 g of Protein, 163% of Vitamin C, 28% of Vitamin A, 11% of Calcium and 11% of Iron. Does it get any better? So, ready to try?

Brussels Sprouts Warm Salad

Ingredients (Makes 1 serving)

Brussels Sprouts - 2 cups, diced/sliced or chopped as you like
Onions - 1/2 cup sliced/diced or chopped, use the same way you do brussel sprouts
Salt - 1 dash
Black Pepper - 1 dash or per your taste
Olive Oil - 1 tsp
Reduced Fat - 1-2 tbsp Feta Crumbled
Preparation


  • Take a non stick pan and heat in medium heat
  • Add oil and once the oil is hot, add in onion and brussel sprouts
  • I usually add the dash of salt here (but you can add it at the end too, your preference)
  • Saute (open pan) for up to 4-5 minutes
  • Close the lid and let it steam for about 1 min.
  • Open the lid and switch off the gas
  • Add salt/pepper (skip salt if you already added it before).
  • Take it in serving bowl and crumble feta cheese all over.
  • Mix it right before serving.
Serving
Serve it as a warm salad right before lunch/dinner. In addition, you can also use it as a side dish with roti/rice. I also tried using it as a soft taco stuffing and it works great, so use your imagination.

Roundup of March Edition of Healthy Me & Healthy Us event


Hello Friends,

With a little bit of delay, here is the much awaited roundup of March Edition of Healthy Me & Healthy Us event. This is a new event and tradition I started in March (after completing 3 years of the blog).

 I have to say, I am really excited @ the response I got for this event and looking forward to making our lives and that of all our friends and families around us a healthy one. I am impressed at how much now people are thinking of healthy eating and making those small changes needed. It takes really small changes to bring it to action. Like grabbing a fruit for dessert instead of a brownie or drinking homemade or sugarless/no additives juices instead of those bottled juice @ grocery shelf, which are no doubt easily available and probably much cheaper, but does not add value to your life.

OK, I will cut my lecture short. I got a whopping 51 entries from my blogger friends and I am thankful and grateful to all of them and hoping to get similar contributions for future editions too.

And, before beginning the roundup, I would like to remind everyone that the APRIL EDITION of this event is going on currently @ my blog, so please do send your entries.
