Guest Hosting "Dish it out with Potatoes and Leafy Greens"

Hello Friends,


It has been a while since hosted or guest hosted an event. And, thus this event comes as a refreshing one. 


I am guest hosting Vardhini's - Dish It Out event with Potatoes and Leafy Greens as stars for September 2011. The event runs from September 1st to September 30th



Who doesn't love potatoes right? And what can be something that we can add to potato to make it little guilt-free as they are usually little notorious with diet conscious people. So, leafy greens will step up and do that job. And, so dear blogger friends and non-blogger readers, whip up some mouth watering recipes with these combo (remember they have to be highlight of the recipe) and send it my way.


Here are some basic rules that you MUST follow for this event:

  1. Make a dish using the ingredients mentioned (Potatoes and Leafy Greens). We should be able to taste the ingredients in the final dish.
  2. ONLY vegetarian entries. Eggs are allowed in baking ONLY.
  3. Use of logo is appreciated as it helps spread the word.
  4. Link to both Vardhini's Dish it Out announcement and this announcement is mandatory.
  5. Archived entries are accepted as long as updated with these hyperlinks as above.
  6. Non bloggers may also send in their entries.

Ultimate Brownie for Blog Hop

Today is the 3rd week of Blog Hop Wednesdays, an effort started by Radhika. It encourages us to blog hop and try our fellow blogger's recipes. Please check out what all this is about.


This week, I am paired with Anamika who has an amazing blog with great recipes and the best of all, some mouth watering pics and presentations. I have a couple from her blog bookmarked, but this is what I started with. She has this wonderful table in this post where she compiled some mouth watering brownie recipes from different sources and how they compare with each other. She picked this recipe Dorie Greenspan. Now, being a big Brownie fan, you can bet that I am going to try all those 6 recipes one by one, but this was the first one I wanted to try.


It came out perfect, not too crumbly, not too chewy, just perfect and melt in the mouth kind. How many of you have had those Brownie Petites @ COSCO (a store here in US). If you had those, you can compare these to the texture and taste of those. It took me just 10 minutes of preparation and 25 minutes of baking. It is that simple. So, what are you waiting for get started guys and make them. You will not regret. Thanks Anamika for that table and this delicious recipe.


Ultimate Brownie (Recipe of Dorie Greenspan)
Ingredients
Butter - 5 tbsp (I used salted to give that extra salty taste in my brownie, which I like, but feel free to use unsalted one to suit your taste buds)
Chocolate - 6 oz (I used semi-sweet squares of baking chocolate)
All-Purpose Flour - 1/3 cup
Sugar - 1/3 cup
Eggs - 2 large (I used egg beaters equivalent of 2 large eggs)
Vanilla - 1 tsp
Salt - 1/4 tsp
Preparation
  • Prepare your favorite pan with parchment paper and then some butter on the parchment paper as well.
  • Pre-heat oven to 350 degree F.
  • Take a small saucepan on heat and melt butter and chocolate till smooth.
  • Take it off the heat and let it come to room temp (about 4 min.or so)
  • Add sugar and whisk till smooth.
  • Add eggs, vainlla and salt and mix well till incorporated.
  • Add whisked APF now and mix till smooth.
  • Pour in the pan and bake for 25 - 30 minute or till toothpick comes out clean.
  • Let it rest for at least 10 minutes before trying to eat it.
  • Patience will be paid off :)
  • I got 16 squares of the size you see in the picture from the ingredients mentioned above.
Serving
Serve them as it is or with ice-cream if you prefer it. I just had a warm brownie all by itself. What a divine pleasure it gives to a chocoholic like me. You have to be a chocoholic to understand that :)

Sweet and Spicy Peach Chutney from KO Rasoi

Hello Friends,


I have been thinking of making something with Peach this entire month and finally I got a recipe I really wanted to try and make and which intrigued me. 


Sweet and Spicy Peach Chutney is a recipe of Sanjana of KO Rasoi. I am sure she needs  no introduction as she is this young girl , just 22 years old but is a wonderful cook/chef and you must visit her blog if you have never done so as I can bet, you will be hooked on to it. I have already reproduced a few from her collection and a few more bookmarked :)


I have used her recipe as it is, so I am not going to repeat it here and also as this is a new rule (to not re-write the recipe) of our Bookmarked Recipe - Every Tuesday event, to which this recipe goes.


You will be amazed at how well those spices go with Peach which at least I never knew it would. The chutney is a great condiment with almost anything, with your idli/dosa or a breakfast sandwich spread with some cream cheese or just a great snack all by itself if you like peaches and you like chutney like me :)


This whole effort of trying something new with Peach (which normally I just enjoy eating as it is), is for my contribution to this month's Veggie/Fruit a Month - PEACH event hosted by my dear blogger friend Susan. Kesari Bhaat - केसरी भात (Saffron Infused Sweet Rice Preparation) - A Rajasthani Delicacy for my 401st Post

Updated: I had mistakenly written as 301st post whereas it is 401st. Silly me !!! :)


Wow, time just flies by, especially when you busy like hell. I have no memory of how these last couple of months passed. One more day and it will be September, whoa !!! Where has all the time gone? When I wake up in the morning, I usually consider that day almost done as it will pass without me doing anything, busy, busy, busy. 


OK, enough babbling. Today I am so happy that I am actually writing my 301st post. Can you believe, 401st post? It has been about 1.5 years since I started this blog, which was just an effort to have some Rajasthani recipes in one place as I did not find a single blog which had a lot of those. Most of the places had only those well-known 5 or 6 recipes. I am so proud to say that my blog boasts of about 90+ traditional Rajasthani and slight fusion recipes.


Also wanted to mention that I have now 316 follows (thanks everyone) and 228,729 hits.


Thank you to all my blogger friends and readers for their continued support and encouragement to make this blog what it is. If you all were not there, this blog wouldn't be where it is today. Thanks !!!


To celebrate this occasion, I am sharing a traditional and very commonly made Rajasthani sweet rice preparation. If you guys ever had Zarda recipe (a traditional Muslim Rice preparation), this is very similar to that.  Very easy to make and a perfect way to end your meal. I apologize for not a great picture. I was in real rush when I took it. When I make it again, I will try to replace this pic with a better one.


Kesari Bhaat - केसरी भात (Saffron Infused Sweet Rice Preparation)
Ingredients
Long Grain White Rice - 1 cup
Boiling Water - 1.5 - 2 cups (keep an eye on the rice while cooking and add more, if needed)
Sugar - 3/4 cup (adjust the quantity to suit your needs)
Saffron - a few strands (soaked in few tbsp of warm water)
Mixed nuts - 1/4 cup of your choice
Green Cardamom Powder - 1/2 tsp
Ghee (Clarified Butter) -2 tbsp
Preparation

  • Wash and Soak rice for 1-2 hours. Drain after the period.
  • Meanwhile in a non-stick pan take 1/2 tbsp ghee and fry your choice of mixed nuts) and keep separate.
  • Take a heavy bottomed pan (to make sure that rice doesn't stick to the bottom) and add the remaining ghee.
  • Once ghee is hot, add drained rice and fry till rice becomes translucent.
  • Add boiling water to it along with saffron infused water and let it cook covered till it is about 3/4 way  cooked. Keep stirring every few minutes to make sure it doesn't stick to the bottom.
  • Now, add sugar and cardamom powder. Mix well and cook to perfection.
  • Mix in fried nuts and serve warm.
  • Because of all the ghee and frying rice, the rice grains will be very fluffed and separate and not become mushy, unless you add a lot of water or overcook this recipe.

Serving
This is traditionally made on occasions as a perfect ending of a feast. Enjoy !!!

Nariyal Ki Khichdi - नारियल की खिचड़ी (Coconut Rice and Lentil Preparation) from Deepthi

Hello Friends,


Today, I am here with a wonderful new dish that I had never tried and loved making and eating it both. It is called Nariyal Ki Khichdi - नारियल की खिचड़ी (Coconut Rice and Lentil Preparation). I saw it in Deepthi's blog and wanted to try it out right away.
If you like the taste and flavor of coconut milk and shredded coconut, I can guarantee that you will love this recipe. It is a one pot meal if you add some veggies to it as well. I guess, this was the first time and next time I will experiment more with it. I cooked khichdi in rice cooker and didn't like the dry version much, but I am thinking cooking it in regular cooked and adding more liquid should do the trick, so that is for next time :)


I served it with  Zucchini Mor Kuzhambu - Zuchhini की कढ़ी (Zucchini in yogurt gravy) and it was a match made in heaven :)

Zucchini Mor Kuzhambu - Zuchhini की कढ़ी (Zucchini in yogurt gravy) for Blog Hop


Hello Friends,

This week, I was paired with Vardhini. She has such an amazing blog and if you have already read my first entry (Chettinad Aloo Bhujiya - चेत्तीनाद आलू भुजिया (Chettinad Style Potato Fry), here is my second one. I just couldn't stop at one. I had to make this one as well. had posted it only few days ago and the moment I saw it, I knew I had to try it.


It is her wonderful creation Zucchini Mor Kuzhambu - Zuchhini की कढ़ी (Zucchini in yogurt gravy) For all my North Indian friends, it is a type of kadhi without besan (chickpea flour). If you like yogurt in gravy, you got to try it out and you will not regret, I don't and we all thoroughly enjoyed it. I had it along with Coconut Khichdi (the recipe follows soon) from another blogger friend Deepthi. Didn't I say that these days I am surviving on bookmarked recipes and I am absolutely enjoying it :)

And, what more, my husband actually prepared aloo paratha with this masala for my sons in my absence :)

Quick Cooking Microwave Dhokla

Hello Friends,

Another Tuesday and another version of bookmarked recipes. These days, it feels like all I am doing are cooking from others' recipes as I am so sick of my own food... lol

Here is a wonderful and spicy Quick Cooking Microwave Dhokla from Rajani's Blog. I have to say, it exceeded my expectations and now I will be making it frequently. I have to tell you guys here that I love dhokla and this was my first experience of making it at home and I love the microwave way :)

Rava Dosa - रवा दोसा (Semolina Crepes)

Hello Friends,


Here is a wonderful Rava Dosa - रवा दोसा (Semolina Crepes) recipe that I made with the recipe from blog South Indian Home. This is one of my types, as it is instant, quick to bring together and has a crispy texture which my son and hubby love. I have used her recipe as it is, so please follow the link to her recipe and check out the details there.


The only thing I changed here or rather you can say I skipped is adding onions as I was making it for my boy and he doesn't enjoy onion pieces in dosa. We loved the texture, taste and especially the simplicity of it. Please enjoy !!!

Banana Strawberry Muffins for Sweet Punch August

Hello Friends,

I think I am the last person posting this or at least the last few :)

I firstly would like to thank Sweet Punch team for hunting for such delicious and mouth watering recipes for us to bake every month. I thoroughly enjoyed baking and eating this month's sweet punch, which was Banana Strawberry Muffins, for which the recipe source was our favorite Joy of Baking. Bookmarked Recipes - Every Tuesday (Volume 53) - TURNS ONE !!!

Hello friends,

We are so very proud to announce that we have completed one year of this event. We have had a very successful year and we are sure  everyone will agree that it has helped reduce our bookmarked list down by just a bit :)

It started originally as a small attempt to reduce my own bookmarked list and encourage others to do the same on 3rd August 2010. Then, my dear blogger friend Aipi (US Masala fame) agreed to join me in these efforts on 14th September 2010. Kurkura Palak Pakoda - कुरकुरा पालक पकोड़ा (Crunchy Spinach Fritters)

Hello Friends,

Our dear fellow blogger friend Radhika came up with this wonderful idea of encouraging blog hopping with a reason. So, this event encourages you to blog hop a specific paired blogger (which changes every week) and then create something delicious from their blog. A lot of effort has been put into this by Radhika, so check out what all this is about and let's see what I got for you.

I was paired with Nirmala, a wonderful fellow blogger. She has an amazing blog with delicious recipes, but this is what caught my eye. Kurkura Palak Pakoda - कुरकुरा पालक पकोड़ा (Crunchy Spinach Fritters). When I saw it, I had to try it, for the fact that I usually make these pakodas using only besan, but she had used rice flour as well and I was intrigued to try it out. I was very happy with the crunchiness and texture of these fritters. I recommend you to try it out and enjoy it like we did last evening :)

Easy Eggless Microwave Brownie from Veggie Platter

Hello Friends,


Here I am with another decadent, ooey-gooey chocolatey recipe that I am sure my fellow chocoholic friends will love and surely give a try. 


I tried it from Suma's blog. After seeing her recipe, I had to try it out and so I did and absolutely loved it. The taste, simplicity and how quickly it comes together. It cannot get better than this when you want a quick and sinful brownie :)
